iTrackBites ambassador Amber here to share some ways to enjoy your (inevitable) Thanksgiving leftovers without feeling like it’s Thanksgiving over and over and over… For me, the key is to change up the traditional flavors for my other favorite cuisines. Here are three hacks to get you excited about that turkey!
I recently saw an elaborate recipe for deep dish, fresh dough thanksgiving leftover pizza and thought “who wants to spend MORE time in the kitchen this weekend?”, so I made a way easier, BITE-friendly recipe in the app. The key is using a crust that works for your plan and is already ready to go. For me, I chose Joseph’s Lavash pita bread. It is only 2 BITES on the Carb Conscious plan for the whole thing (aka a whole pizza!). Then I can use my BITES for all the toppings. In the recipe I created, I included roasted Brussel sprouts, but you could add any veggie that’s taking up space in your fridge. Find this recipe in the app with pin 608054!The cheese adds saltiness to the turkey (mixed with cranberry sauce) and some crushed red pepper will add some spice. The most interesting aspect of this one is that instead of sauce, you use mashed potatoes! Yum!
While I am not a native Marylander, I have been living here long enough to know that Old Bay makes everything better. One of my favorite mac and cheese hacks is to bulk it up with riced cauliflower. Also, for low-BITE protein, add shrimp or lump crab. Spice it up with Old Bay seasoning (and maybe even some sriracha) and you won’t even remember this was one of your side dishes on Thursday.
I’ve never been one to say no to Mexican food. Why not swap out the chicken in your favorite enchilada recipe for turkey? You could even sneak in some roasted veggies. I suggest having some canned enchilada sauce and corn tortillas on hand to make this a leftover revamp any time you have leftover protein.
