Ingredients

  • 2 Pouches Tuna
  • 1/4 container Single Serving Container of Nonfat Greek Yogurt
  • 2 Tbs Sharp Cheddar Cheese
  • 1/4 Jalapeno
  • 1/8 Medium Red Onion
  • 1 Medium Zucchini
  • 1/2 tsp each Salt & Pepper

Directions

  1. Wash and slice zucchini in half lengthwise.
  2. Use a spoon to scoop out the center.
  3. Season the zucchini with salt and pepper. Place on a foil-lined sheet pan and bake for 10 minutes at 350F.
  4. While the zucchini is in the oven, combine tuna, diced red onion, greek yogurt, salt, and pepper.
  5. Spoon the tuna mixture into the zucchini boats.
  6. Top with cheddar cheese and thinly sliced jalapeño.
  7. Broil until golden brown, and enjoy!
