Veggie Kabobs

One of my all-time favorite appetizers is Spinach Artichoke Dip, but it can be quite high in calories. So, I decided to create my own 'lightened up' version!

Ingredients

  • 3 Bell Peppers (cut in half, then cut each half into 4)
  • 1 small container Cremini Mushrooms
  • 4 Roma Tomatoes (cut into quarters)
  • 2 Red Onions (cut into quarters)
  • 1 Tbs EVOO
  • 1 Tbs Garlic Powder
  • Salt & Pepper
  • 8 Wooden Skewers

Directions

  • Place the cut veggies on the skewers, alternating between the veggies - you can place them in any order you’d like.
  • Put the EVOO on the veggies and then the spices listed above. Rub them on well!
  • Grill until tender.
