Ingredients

  • Salad base:
  • 8 c. Lettuce
  • 1/2 c. Mandarin slices (if using canned, drain first.)
  • 1 1/2 c. Blueberries
  • 1 lb.  Sliced Strawberries
  • 1/2 c. Pecans
  • 1/2 c. Onion
  • 1 lb. Grilled chicken
  • Poppyseed dressing:
  • 1/2 c. Light mayo
  • 1 tbs. Milk
  • 1 tbs. White vinegar
  • 4 tbs. Swerve sugar
  • 1 tbs. Poppyseed
  • 1/4 tsp. Salt

Directions

1. Slice all the fruit and chop up the lettuce. Place in a big bowl or Tupperware.

2. Slice up the grilled chicken.

3. For the dressing: In a small bowl, mix mayo, milk, vinegar, sugar, poppyseed, and salt until it’s smooth and creamy.

4. Pour the dressing over the top of the salad and mix everything together. Enjoy!
