Strawberry Crumble Bars

Ingredients

  • For the Crust:
  • 1 1/2 cup Almond flour
  • 1 cup Rolled oats
  • 2 tbsp Swerve sweetener
  • 1/2 tsp Cinnamon
  • 1/4 cup Oil
  • 1/4 cup Honey
  • 1/2 tsp Vanilla
  • For the Filling:
  • 2 1/2 cup Strawberries
  • 1 tbsp Lemon juice
  • 2 tbsp Swerve sweetener
  • 1/2 tbsp Cornstarch

Directions

  1. Prepare an 8x8 baking dish with parchment paper.
  2. Mix all the crust ingredients in a bowl.
  3. Pour half of the crumble crust mixture into the pan and flatten with your spatula or hand.
  4. Bake in the oven at 350 Fahrenheit for 10 minutes. In the meantime, prepare your filling.
  5. Wash and dice your strawberries and place them in a bowl.
  6. Add your cornstarch, sweetener, and lemon juice and mix until incorporated.
  7. Once your crust comes out of the oven, add your strawberries and then add the rest of the crumble crust.
  8. Flatten again and bake for 40 minutes.
  9. Let cool on the counter for 30 minutes.
  10. Place in the fridge to chill for 1 hour.
