Spinach Artichoke Dip

This is a lighter version of a classic appetizer. This has become a holiday favorite at my house!

Ingredients

  • 1-14 oz. can Artichoke hearts, roughly chopped.
  • 1-8 oz. Block light cream cheese, cut into cubes
  • 1 cup Light sour cream
  • 1 cup Shredded mozzarella cheese
  • ½ cup Shredded Parmesan cheese
  • 4 Cloves minced garlic
  • Salt and pepper to taste

Directions

  1. Add all ingredients to a small crock pot and stir.
  2. Put the lid on and set on LOW for 2 hours.
  3. After 1 hour, remove lid, and stir.
  4. Replace lid and continue to cook for 1 additional hour.
  5. Stir dip and taste to adjust seasoning with salt and pepper.
  6. Serve with crackers or chips.
