Ingredients

  • Cooking spray for greasing
  • 2 cups Rolled oats
  • 1 tsp. Baking powder
  • 1/4 tsp. Salt
  • 2 tsp. Pumpkin pie spice
  • 1 cup Pumpkin purée
  • 1 1/4 cup Skim milk
  • 2 eggs
  • 2 tsp. Vanilla
  • 1/3 cup Brown sugar replacement
  • 1/3 cup Chocolate chips

Directions

  1. Start by preheating your oven to 375°F. Spray an 8 x 8 baking dish with cooking spray.
  2. Grab a bowl and combine all ingredients, stir it well.
  3. You can use chocolate chips, raisins, nuts, or any additions you would like, or leave them out completely.
  4. Spread your mixture in the baking dish and bake for about 30 to 35 minutes.
  5. After removing from the oven, let it cool for a bit before cutting. Divide into nine equal servings.
