Meal prep just got way more delicious! This Protein Blueberry Baked Oatmeal is the perfect make-ahead breakfast—easy to whip up, packed with nutrients, and bursting with juicy blueberry flavor.

Ingredients

  • 3 1/2 cups oats
  • 1/3 cup brown sugar substitute
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup applesauce
  • 3 eggs
  • 1 1/2 cups protein shake
  • 1 cup blueberries

Directions

  1. Preheat oven to 350 degrees.
  2. Grease a 10-inch pan with cooking spray.
  3. Combine oats, brown sugar substitute, baking powder, salt, applesauce, eggs, and protein shake.
  4. Mix until combined.
  5. Add blueberries and stir them in.
  6. Scoop the mixture into the greased pan
  7. Bake for 30 minutes.
  8. The oatmeal should be lightly browned, slightly crisp on top. Let cool for 10 minutes before serving.
