Pineapple Salsa Tacos

These tacos are a flavor-packed win! Made in the instant pot, they're quick, easy, and light on calories-- but bold on taste!

Ingredients

  • 1 1/2 lb cooked chicken breast
  • 1 cup salsa
  • 3/4 cup brown sugar alternative
  • 15 oz pineapple chunks
  • 15 oz sweet corn
  • 1 Tbsp garlic powder
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 6 low-carb tortillas
  • Optional ad-ins: sour cream, guac, lettuce, tomatoes, cheese

Directions

  1. Put all ingredients in the inner pot of the Instant Pot.
  2. Pressure cook for 8 minutes and let it naturally release for 10 minutes.
  3. Serve on low-carb tortillas and with toppings of your choice.
