Light Italian Pasta Salad

A lighter version of delicious classic!

Serves

Ingredients

  • 8 oz Pete’s Pasta (low carb)
  • 1/2 a yellow pepper
  • 1/2 a red pepper
  • 1/4 cup red onion
  • 1/2 cup turkey pepperoni
  • 1/2 cup Ken’s light Italian dressing
  • 1/2 cup Parmesan cheese

Directions

  1. Cook pasta according to package directions.
  2. While it’s cooling, cut up peppers and onions.
  3. Once the pasta has cooled, add all ingredients to a bowl.
  4. Pour light Italian dressing over the ingredients.
  5. Mix well.
  6. Top with Parmesan and stir again.
