This is an easy recipe to double and freezer for later. This recipe makes 2 meals. One for now and one for later. It works well for the busy holiday season!

Ingredients

  • 40 oz. Canned chicken breast
  • 2 tsp. Cumin
  • 1 tbsp. Garlic powder
  • 2 tsp. Salt
  • 2 tsp. Chili powder
  • 7 oz. Canned green chillies
  • 4 cups Monterey jack cheese
  • 4 cups Fat free cheddar
  • 1 cup Light sour cream
  • 1 cup Fat free plain Greek yogurt
  • 8 oz. Light cream cheese
  • 16 Almond Flour Siete tortillas (8 per meal)

Directions

  1. Preheat oven to 350°F.
  2. Combine all ingredients except the tortillas and 2 cups each of the shredded Monterey Jack and fat free Cheddar cheese in a large mixing bowl.
  3. Place half of the mixture in a freezer bag for a future meal.
  4. Layer 4 tortillas in a greased casserole dish. Spread the half of the remaining mixture over them.
  5. Add another layer of 4 tortillas, then spread the remaining mixture on top.
  6. Sprinkle with 2 cups of shredded cheese.
  7. Bake covered for 20 minutes, then uncover and bake an additional 10–15 minutes until the cheese is bubbly.
