Green Beans with Maple Mustard Glaze

Ingredients

  • 1 lb. Fresh green beans, trimmed
  • 1 tsp. Olive oil (or spray for lower calories)
  • 2 tsp. Dijon mustard
  • 2 tsp. Sugar-free maple syrup
  • 2 tbsp. Chopped pecans (toast for extra flavor)
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 400°F.
  2. Toss green beans with olive oil (or spray) and a pinch of salt and pepper.
  3. Roast on a baking sheet for 10–12 minutes, until slightly tender but still crisp.
  4. While green beans roast, toast pecans in a dry skillet over medium heat 2–3 minutes until fragrant. Watch them carefully! Set aside.
  5. In a small bowl, stir together Dijon mustard, syrup, and salt and pepper.
  6. Toss roasted green beans with the glaze and toasted pecans. Serve warm.
