If you love a gyro but want it in bowl form, this one is for YOU. It’s loaded with quinoa, creamy avocado, salty feta, juicy chicken, and that bright lemon squeeze that pulls it all together.

Ingredients

• ⅓ cup dry quinoa

• ½ Hass avocado (flesh only)

• ¼ cup crumbled feta cheese

• 3 garlic-stuffed queen olives

• Juice of ½ lemon

• Prepared Greek-style chicken (or the chicken salad we shared last week)

Directions

  1. Cook Quinoa either on the stovetop or with the 1-1-1 Instant Pot method.
  2. Use 1 cup of quinoa, 1 cup of water, and 1 minute on High with a Natural Release.
  3. While the quinoa is cooking, slice the avocado and season it.
  4. Add the cooked quinoa, chicken salad, feta, avocado, and olives to a bowl.
  5. Add additional seasoning if desired.
  6. Squeeze lemon juice over the bowl and enjoy.
