Grated Egg Avocado Toast

Creamy, dreamy, and oh-so-easy! Grated egg avocado toast is the ultimate breakfast upgrade. Packed with healthy fats, protein, and flavor—it’s a quick and satisfying way to fuel your day.

Ingredients

  • 2 eggs
  • 1 avocado
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 Tbsp lemon juice
  • 2 slices whole-grain bread
  • 1 medium green onion
  • Drizzle of garlic chili oil, if desired

Directions

  1. Hard-boil the eggs and set them aside to cool.
  2. Cut up the avocado and mash it in a bowl. Add salt, pepper, and lemon juice. Mix well.
  3. Toast the bread, then spread the avocado mixture on top.
  4. Peel the boiled eggs and grate each egg over each piece of toast. Top with green onion and a drizzle of chili oil.
