These Granola Bars are easy to make and are just the thing to make ahead of time for a grab and go snack. Pack in a lunch instead of buying expensive granola bars!

Ingredients

  • 1 cup smooth natural peanut butter
  • 2/3 cup sugar free maple syrup
  • 1 tsp. vanilla extract
  • 1/2 tsp. sea salt
  • 2 1/2 cups whole rolled oats
  • 1/3 cup sugar free mini chocolate chips
  • 3 tbsp. mixed nuts, chopped

Directions

  1. Line an 8x8 baking pan with parchment paper.
  2. In a large bowl, stir together the peanut butter, syrup, vanilla, and salt, until smooth.
  3. Add oats, chocolate chips, and nuts. Stir.
  4. Mixture might seem dry at first but keep stirring and it’ll come together.
  5. Stir to combine and press firmly into pan.
  6. Use second piece of parchment paper and the back of a measuring cup to flatten the mixture.
  7. Chill for at least 1 hour, then slice into bars.
