Ingredients

  • 1/4 cup butter
  • 2 eggs whites, at room temperature
  • 1 pinch salt
  • 1 cup sugar alternative (stevia, monk fruit sweetener, allulose, etc.)
  • 3 cups whole almonds
  • 4 tsp. cinnamon

Directions

  1. Preheat over to 325 degrees.
  2. Place butter in a 9x13 pan; place in oven to melt butter, about 7 minutes.
  3. Meanwhile, beat egg whites with salt until frothy; gradually add sugar alternative, beating to stiff peaks.
  4. Gently fold in almonds and cinnamon.
  5. Pour almond mixture onto pan, toss with butter.
  6. Bake for 40 minutes, toss every 10 minutes, until almonds are crisp.
