Fire Roasted Hatch Chile Veggies bring a smoky, spicy kick to your favorite roasted vegetable mix. Featuring a blend of vibrant veggies like bell peppers, zucchini, and onions, these veggies are tossed with flavorful Hatch chiles, known for their unique heat and depth. Roasted to perfection, this dish is a perfect side or topping for tacos, bowls, or as a stand-alone snack with a bold, Southwest flair!

Ingredients

  • 2 -10oz bags of frozen PureVida Fire Roasted Veggies
  • 1 -4oz can of diced green chiles
  • 2 Tbs shaved Parmesan cheese
  • 1 Tbs toasted almonds

Directions

  1. Place the frozen veggies in a baking dish and top with the diced green chiles. Mix well.
  2. Put in the oven on 350 degrees for 15 minutes or until tender.
  3. Take it out and add the Parmesan and almonds on top.
  4. Place back in the oven for 5 minutes to melt the cheese and toast the almonds.
