Busy day? Let your crockpot do the work. This Fiesta Chicken is loaded with tender shredded chicken, sweet corn, hearty black beans, and creamy, zesty flavor in every bite. Perfect for tacos, burrito bowls, or over a bed of greens (and the leftovers taste even better).

Ingredients

  • 1 lbs. Boneless skinless chicken breast
  • 3 tbsp. Taco seasoning mix
  • 1 - 15 oz. can Whole kernel corn
  • 1 - 15 oz. can Black beans
  • 1 cup Mild chunky salsa
  • 4 oz. Reduced fat cream cheese

Directions

  1. Add chicken to a crock pot and top with a packet of taco seasoning and a cup of salsa.
  2. Drain and rinse the corn and black beans and add on top of chicken.
  3. Cook on low 6-8 hours or high 3-4 hours.
  4. Take out chicken and shred it once it's cooked through. Add it back and mix everything together.
  5. Cut cream cheese into small pieces and add on top of chicken mixture. Cook for 30 minutes, until cream cheese is melty.
  6. Once cream cheese is melted, mix everything together one more time, and serve!
