This easy stew will hit the spot this fall. It’s hearty, but still can easily fit into the plan. The perfect comfort food!

Ingredients

  • 2 lbs. Grass-fed feed stew meat
  • 1/2 cup All purpose flour
  • 1 tbsp. Seasoning salt
  • 2 tbsp. Olive oil
  • 1 Onion, chopped
  • 2 Bay leaves
  • 15 oz. Diced tomatoes (canned)
  • 1/4 cup Worcestershire sauce
  • 2 tsp. Clean Monday beef bullion
  • 4 potatoes
  • 28 oz. Frozen mixed veggies of your choice

Directions

  1. Put cut up stew meat in a ziplock bag. Add flour and seasoning salt to the bag. Coat the meat well.
  2. Add 1 tbsp. of oil to a pan or the Instant Pot on medium and sear meat on all sides.
  3. Add the contents of the bag and all other ingredients to an Instant Pot or crockpot. Set Instant Pot for 30 minutes and do a natural release. If cooking in a crockpot, cook for 8 hours on low.
