Creamy Chicken Noodle Soup

This soup is really easy and can be put together quickly on busy winter days! It doesn’t take long, but the flavor is amazing due to Clean Monday Meals seasonings!

Ingredients

  • 1 lb. Cooked chicken breast
  • 1 cup Chopped carrots
  • 1 cup Cubed potatoes
  • 6 cups Prepared chicken broth
  • 2 packs Clean Monday Ramen Noodles (seasoning packets will not be used for this recipe)
  • 1/4 cup Clean Monday Chicken Ramen seasoning
  • 1/2 cup Clean Monday Cream of Chicken Soup powder

Directions

  1. Cook the chicken.
  2. Prepare the broth and add the vegetables. Add the chopped carrots, potatoes, and celery.
  3. Bring mixture to a simmer and cook about 15 minutes or until vegetables are tender. While the vegetables simmer, shed the cooked chicken.
  4. Add the ramen noodle bricks whole to the simmering soup. Let them cook 5-7 minutes, breaking them apart as they soften.
  5. Make the soup creamy by adding Cream of Chicken powder. Stir until soup becomes desired creamy consistency.
  6. Stir the shredded chicken back to the pot and mix well. If you desire creamier soup add a few more tablespoons of Cream of Chicken powder.
  7. Serve hot.
  8. Note: The soup will thicken as it stands. Add more broth or water if needed to reach your desired consistency.
