• 1 cup white whole wheat flour (or all-purpose)
• 1 tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• 1 tsp vanilla extract
• ¼ cup unsweetened applesauce
• ¼ cup sugar-free maple syrup (or honey)
• 1 large egg
• ½ cup nonfat plain Greek yogurt
• ¾ cup fresh strawberries, diced small
• ¼ cup mini chocolate chips (regular or sugar-free)
1. Preheat oven to 350°F and prepare a muffin tin (grease or use liners).
2. Whisk flour, baking powder, baking soda, and salt in a bowl.
3. In another bowl, whisk applesauce, syrup, egg, Greek yogurt, and vanilla until smooth.
4. Gently mix dry ingredients into wet until just combined. Don’t over-mix it!
5. Add strawberries and chocolate chips, gently fold them in.
6. Fill muffin cups evenly (I used a 1/4 cup to fill the cups) and bake for 18–22 minutes.
7. Cool in the pan for 5 minutes, then move to a rack. These turned out so good! Enjoy!
