Ingredients

  • 1 can of chickpeas
  • 2 cups of cucumber
  • 1 1/4 cups of grape tomatoes
  • 1/4 cup of red onion
  • 2 cups of chicken
  • 1/2 cup of feta cheese

Dressing:

  • 1/4 cup EVOO
  • 2 tbsp lime juice
  • 2 tbsp minced garlic
  • 1 tsp Italian seasoning

Directions

  1. Add chickpeas, sliced cucumbers, sliced grape tomatoes, red onion, and shredded chicken to a bowl.
  2. In a separate bowl, mix the dressing ingredients and pour over top of the chickpea mixture. Mix well.
  3. Top with feta cheese.
