Chicken Stir Fry

Ingredients

  • 2 chicken breasts
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp chili powder
  • 1/4 tsp poultry seasoning
  • 1/4 c. Corn starch
  • 4 sweet peppers
  • 2 C. Broccoli stir fry mix (Great Value)
  • 1 cup nonfat shredded cheddar

Directions

  1. Slice the chicken breasts into small chunks.
  2. In a bowl, mix the chicken with the seasonings.
  3. Add the cornstarch and mix thoroughly.
  4. Add a spritz of olive oil in a cast iron pan over medium/low heat.
  5. Once the oil is hot, add the chicken and cook until browned and slightly crispy.
  6. Remove the chicken from the pan and sauté the peppers for a few minutes.
  7. Add the veggie mix and sauté until the vegetables are soft. Return the chicken to the pan and mix well.
  8. Add cheese for extra flavor.
  9. Serve warm with rice or on its own.
