Craving a quick and healthy dinner? Try this Chicken Fajita Sheet Pan Meal! Packed with vibrant veggies and tender, seasoned chicken, it's the perfect way to get a flavorful, nutritious meal with minimal cleanup. Just toss everything on a sheet pan, bake, and enjoy!

Ingredients

  • 1 lb of chicken breast (cut into this strips)
  • 1/3 cup of fajita seasoning mix
  • 1 cup canned diced tomatoes and green chiles
  • 2 Tbs whipped cream cheese
  • 1/4 cup shredded Monterey Jack Cheese
  • 1 red onion (thinly sliced)
  • 1 yellow bell pepper (thinly sliced)
  • 1 red bell pepper (thinly sliced)
  • 1 orange bell pepper (thinly sliced)

Directions

  1. Combine the chicken, canned diced tomatoes, green chiles, fajita seasoning, cream cheese, and shredded cheese in a bowl until well combined.
  2. Add to the middle of a sheet pan.
  3. Place all of the bell peppers and onion around the chicken.
  4. Bake at 400 degrees uncovered for 30 minutes.
  5. Sprinkle on some cilantro and enjoy!
