This chicken fajita casserole is warm, cheesy, flavor-packed, and perfect for those nights when you want something comforting and goal-friendly.

Ingredients

  • 1 lb chicken breast, cooked
  • 2 cups instant rice, uncooked
  • 1 can cream of chicken, fat-free
  • 1 cup diced onions and peppers
  • 1 can diced tomatoes w/chilies
  • 1 1/2 cups chicken broth
  • 1 packet fajita seasoning
  • 1 cup fat-free greek yogurt
  • 1 3/4 cup fat-free shredded cheese

Directions

  1. Preheat oven to 350 F
  2. Dice or shred cooked chicken
  3. In a large bowl, mix all ingredients except 1 cup of the cheese
  4. Add to casserole dish and spread evenly
  5. Cover tightly with foil and bake for 35-45 mins, or until rice is cooked
  6. Remove foil and add remaining cheese. Bake for another 10 mins
  7. Once cheese is melted and bubbly, remove from oven
