As a child, my mother always incorporated fish into our dinner rotation. She always had a unique and delicious way of making every dish. I love this recipe, I hope you will too!

Ingredients
10 Yellow Mini Potatoes
3 Stalks of Celery
1 Lemon
3 Serrano Peppers
2 Tbsp Minced Garlic
8 White Fish Filets
1 CupCilantro
2 Medium Tomatoes
Directions
Begin by adding the minced garlic, EVOO, black pepper, Old Bay seasoning, Cumin, salt, and Cilantro to a bowl.Combine them well.
Now, place the White Fish to a baking tray.
Pour half the spice mixture evenly over White Fish.
Now sprinkle the remaining spices from the ingredient list on top.
Add the vegetables to the spice mixture and coat them well!
Finally, add all of the vegetables on top of the fish in the tray.
Pour any leftovers of the spice mixture on top.
Cover with foil and bake until the potatoes are tender and the fish is fully cooked (every oven is different)
