Spinach and Artichoke Dip

I love an easy and delicious cold dip! It makes for a great appetizer at parties or the holidays!

Ingredients

  • 1 CupAldi Nonfat Greek Yogurt
  • 1 (16 Ounce Container)Low Fat Good Culture Cottage Cheese (whipped in a blender)
  • 1 CupChopped Artichokes
  • 4 CupsFresh Spinach (cooked, cooled, and chopped)
  • 1 TbspMinced Garlic
  • 2 TbspDried Onions
  • 1/4 CupHot Peppers (optional)
  • 1 CupKraft Fat Free Mozzarella Cheese
  • 1 Tbsp Dak's Green Zest or Italian Seasoning
  • 1/2 TbspHidden Valley Ranch Seasoning
  • Salt to Taste
  • Pepper to Taste
  • 2 Tbsp Grated Parmesan
  • Parsley to Garnish

Directions

  1. First, blend the cottage cheese in a blender.
  2. Saute the spinach and set aside to cool.
  3. Combine everything into a bowl (besides grated parmesan and parsley).
  4. Pour into a dish of choice or keep in bowl.
  5. Chill for 30 minutes.
  6. Garnish with Parmesan and parsley, then serve.
