Preheat oven to 375F. Place chicken into an oven safe dish. Spray lightly with avocado oil. Season chicken with salt, pepper, 1/2 tsp onion powder, 1/2 tsp garlic powder and 1 tsp Dak’s Super Greek seasoning. Cook until internal temperature reaches 165F. About 25-30 minutes. Set aside when done.
In a bowl combine the non fat greek yogurt, minced garlic, lemon zest, lemon juice, 1/2 tsp onion powder, 1 tsp Dak’s Greek seasoning, 1/2 tbsp dried dill, 1 tsp dried parsley, salt & pepper (to taste).
Grate one of the mini cucumbers and squeeze as much liquid out from the grated cucumber and add back into the yogurt mixture.
