Black Eyed Pea Salad

A tasty side dish for either your next BBQ or Taco Tuesday!

Ingredients

  • 1/4 Tsp Black Pepper
  • 2 Tsp Avocado Oil
  • 2 Tbsp Cilantro
  • 1 Green Bell Pepper
  • 1 Tsp Cumin
  • 1/2 Medium Red Onion
  • 2 Tbsp Lime Juice
  • 1 Red Bell Pepper
  • 8 Ounces Grape Tomatoes
  • 1/4 Tsp Kosher Salt
  • 2 Cloves of Garlic
  • 1 Tsp Paprika
  • 1 Hass Avocado
  • 2-1/2 CupsBlack Eyed Peas

Directions

  1. Drain and rinse black eyed peas and place in a large bowl.
  2. Dice peppers, onions and avocado. Add to the large bowl.
  3. Quarter the grape tomatoes and add to the bowl.
  4. Mince the garlic and add to the bowl.
  5. Chop the cilantro and add to the bowl.
  6. Add remaining ingredients to the bowl, and season with salt and pepper to taste.
