Cheesy Chicken Quesadilla

Ingredients

  • 1 chicken breast
  • 4 almond flour tortillas
  • 1 cup nonfat shredded cheese
  • 1/2 of a large sweet pepper

Directions

  1. Cook the chicken breast in a cast iron pan (seasoned to your taste) and shred it into small pieces. Transfer the shredded chicken to a bowl.
  2. Chop a sweet pepper and sauté it in the same cast iron pan used to cook the chicken until it becomes soft.
  3. In a skillet, place a tortilla and add your shredded chicken, cheese, peppers, and additional cheese.
  4. Top the tortilla with another tortilla and fry it for 2-3 minutes, or 3-4 minutes if you prefer a crunchier texture.
  5. Serve your chicken quesadilla with a dollop of light sour cream or nonfat Greek yogurt.
