Blueberry Muffins

These soft, healthy, and delicious blueberry muffins are the perfect grab-and-go option for breakfast or a snack. Packed with flavor and goodness, they make staying on track easy and enjoyable!

Ingredients

  • 4 eggs
  • 2/3 c sugar
  • 1/2 c cottage cheese
  • 1 tbsp baking powder
  • 1 tsp vanilla
  • 1/2 c flour
  • 2 1/2 c almond flour
  • 1 c blueberries

Directions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Mix all the ingredients together until there are no clumps. It will be a thick batter.
  3. Prepare a muffin tin with liners.
  4. Scoop the batter into the tin about half to 3/4 full.
  5. Bake for 25-30 mins.
