Ingredients

1 TBSPItalian Seasoning1 TSPSalt2 TBSPParmesan Cheese1 TSPBlack Pepper4 MEDIUMGarlic8 OZLight Elbow Noodles2 PINTGrape Tomatoes4 WEDGESLaughing Cow Light Cheese4 CUPSSpinach

Directions

Preheat oven to 400F.In an oven safe 9x13 casserole dish pour in the tomatoes and garlic.Spray with avocado oil.Season with salt, pepper, and Italian seasoning.Make a spot in the center of the tomatoes and place the light laughing cow wedges.Bake for 30 minutes.While it’s baking, cook pasta, set aside once done with some reserved pasta water.Once done baking take a fork and smash the cheese and tomatoes while combining.Add the pasta, and spinach until wilted.Season with salt, pepper, and garnish with grated parmesan.
