Your St. Patrick’s Day Meal Plan

Who doesn’t love St. Patrick’s Day? There are rainbows and leprechauns and shamrocks and green as far as the eye can see!

There are also a lot of traditions surrounding food for St. Patrick’s Day, which can be tricky. But never fear, the Healthi Recipes feature has your back! We’ve got a day’s worth of meals listed below, all of them full of Irish pride. Try them out and you’ll feel like doing a little Irish jig by the end of the day!

BREAKFAST

We’re kicking things off with a green smoothie! It’s got some protein and vitamins that make it a great way to start any day.

Green Smoothie

INGREDIENTS:

  • Almond Milk (2 cups)
  • Banana (1)
  • Kale (1 large)
  • Mango (.75 cup)
  • Pineapple Chunks (.75 cup)
  • Vanilla Protein Powder (1 scoop)

INSTRUCTIONS:

  1. Place all ingredients in a heavy-duty blender and puree until smooth. Makes on enormous serving, or 2 large servings!

LUNCH

Ok, this might not be the most traditional St. Patrick’s Day lunch, but hear us out… it has corned beef and melted cheese. Perfect combination? We think so.

St. Patrick’s Day Corned Beef Cuban Grilled Cheese Sandwich

INGREDIENTS:

  • Butter
  • Corned Beef (2 slices)
  • Mustard (1 tablespoon)
  • Pickle (2 slices)
  • Roast Pork (2 slices)
  • Sub Bun (1)
  • Swiss Chard (2 slices)

INSTRUCTIONS:

  1. Butter one side of each slice of the bread and spread mustard on the other sides.
  2. Place one slice of cheese on one slice of bread, on top of the mustard.
  3. Layer the roast pork, corned beef, pickle, and remaining cheese, and top them with the remaining slice of bread, buttered side up.
  4. Grill over medium heat until golden brown and the cheese has melted, about 2-3 minutes per side.

DINNER

We’re keeping dinner traditional with this Shepard’s Pie dish. Or at least, traditional with a twist! Instead of using mashed potatoes on top, we’re using mashed cauliflower, making this dish low carb.

Keto Shepard’s Pie or Cottage Pie

INGREDIENTS:

  • Olive Oil (2 tablespoons)
  • Ground lamb (1 pound)
  • Garlic (2 cloves)
  • Onion Powder (.5 teaspoon)
  • Italian Seasoning (.5 teaspoon)
  • Ground Pepper (.25 teaspoon)
  • Salt (.5 teaspoon)
  • Tomatoes (1 cup)
  • Zucchini (1 cup)
  • Celery (.33 cup)
  • Cauliflower (1 head)
  • Cream Cheese (4 ounces)
  • Cheddar Cheese (.5 cup)
  • Heavy Cream (.25 cup)

INSTRUCTIONS:

Meat Mixture:

  1. Heat oil in large skillet over medium high heat.
  2. Add lamb, garlic, onion powder, Italian seasoning, ground black pepper, and salt. Cook and stir until meat is browned.
  3. Stir in the tomatoes, zucchini, and celery. Cook over medium heat for 10 minutes, stirring occasionally.

Mashed Cauliflower Topping:

  1. Steam cauliflower over boiling water in a covered pot for 8-10 minutes. Or cook for 2 minutes in an Instant Pot on high pressure then do a quick pressure release.
  2. Transfer cauliflower to a food processor.
  3. Add in the cream cheese, cheddar cheese, and heavy cream. Process until mixture is smooth. Alternatively, a hand masher or electric mixer can be used to mash everything together. Spread the mashed cauliflower mixture over the cooked meat mixture.

Baking:

  1. Bake in a preheated 350F over for 20-25 minutes or until topping starts to brown.

DESSERT

Bailey’s Irish Ice

INGREDIENTS:

  • Coffee (1 oz)
  • Espresso (1 Tbsp)
  • Guinness (1 cup)
  • Ice (2 scoops)
  • Irish Cream (1 oz)

INSTRUCTIONS:

  1. Combine in blender and blend until smooth. ENJOY!
